Ingredients

  • 1 lb boneless skinless chicken breasts
  • 6 cups chicken broth
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 2 cups egg noodles
  • Fresh parsley for garnish

Instructions

  1. Place chicken breasts, chicken broth, carrots, celery, onion, garlic, dried thyme, dried parsley, salt, and pepper into the crockpot.
  2. Cook on low for 6 to 8 hours or on high for 3 to 4 hours until chicken is tender.
  3. Remove chicken and shred with two forks.
  4. Add egg noodles to the crockpot and cook for an additional 15 minutes until noodles are tender.
  5. Return shredded chicken to the pot and stir to combine.
  6. Garnish with fresh parsley and serve hot.

Notes

  • You can substitute egg noodles with any pasta of your choice or gluten-free noodles if preferred
  • For a thicker soup, add a cornstarch slurry towards the end of cooking
