  • 2 large croissants
  • 4 large eggs
  • 2 tablespoons butter
  • 4 slices cheddar cheese
  • 4 slices cooked bacon
  • 1⁄4 cup spinach
  • 1⁄4 teaspoon salt
  • 1⁄4 teaspoon black pepper

Instructions

  1. Heat your oven to 350°F 175°C and place the croissants cut side up on a baking sheet.
  2. Toast the croissants in the oven for about 5 to 7 minutes until slightly browned.
  3. While warming the croissants, melt two tablespoons of butter in a skillet over medium heat.
  4. Whisk the eggs thoroughly in a bowl until well blended.
  5. Pour the eggs into the hot buttered skillet and stir occasionally as they cook gently for 3 to 4 minutes until scrambled.
  6. Add salt and pepper to the eggs and mix evenly then remove the skillet from heat.
  7. Slice each croissant horizontally to create sandwich halves.
  8. Layer cheddar cheese on the bottom halves followed by bacon slices and scrambled eggs.
  9. Top with fresh spinach and cover with the croissant tops.
  10. Serve the sandwiches warm while the cheese remains melted.
