  • 4 sub rolls
  • 1 lb chicken tenderloins tenderized
  • 2 hearts romaine lettuce washed dried chopped
  • Fresh grated parmesan
  • Lemon juiced
  • Caesar dressing for salad + 1/2 cup for breading
  • Breadcrumbs or panko crumbs for breading
  • Flour for breading
  • Avocado oil for frying
  • 2 heads of garlic roasted
  • 1 tbsp parsley finely chopped
  • 8 tbsps unsalted butter softened
  • 1/8 cup fresh parmesan grated
  • Salt and pepper

Instructions

  1. Preheat oven to 350°F.
  2. Combine all garlic butter ingredients in a small bowl and set aside.
  3. Slice and slightly hollow out sub rolls, spread garlic butter inside and add extra grated parmesan.
  4. Place rolls open side up on baking sheet and bake for 10-15 minutes or until toasted.
  5. Prepare breading station with flour, caesar dressing mixed with water, and breadcrumbs.
  6. Bread chicken cutlets in station.
  7. Heat avocado oil in large pan over medium heat and fry cutlets until golden brown on each side.
  8. Drain cutlets on paper towels.
  9. Toss chopped romaine lettuce in dressing with lemon juice and parmesan.
  10. Assemble sandwiches with sub roll, cutlet, salad, and extra parmesan. Enjoy!

Notes

  • For crisp tops, broil 2–3 minutes at the end
