  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 1 medium head green cabbage cored and chopped
  • 2 sticks celery chopped
  • 2 medium carrots sliced into thin rounds
  • 1/23/4 teaspoon kosher salt
  • 1/23/4 teaspoon black pepper
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/21 teaspoon Aleppo pepper or red pepper flakes
  • 1 28-ounce can diced tomatoes with juices
  • 3 cups low sodium vegetable broth
  • 1 cup fresh parsley chopped
  • 3 stalks green onions trimmed and sliced
  • 1 inch piece fresh ginger peeled and finely grated
  • 1 large lemon zested and juiced

Instructions

  1. Heat the olive oil in a large Dutch oven or cooking pot until shimmering. Add the onion and garlic and cook until fragrant.
  2. Add the cabbage, celery, carrots, kosher salt, and black pepper. Cook until vegetables have softened somewhat, about 5–7 minutes.
  3. Add the turmeric, cumin, coriander, and Aleppo pepper and toss to coat the vegetables.
  4. Add the diced tomatoes with their juices and the vegetable broth. Bring to a boil for 5 minutes, then reduce heat to medium-low.
  5. Cover partway and simmer for 20–25 minutes until vegetables are tender.
  6. Turn off the heat and stir in parsley, green onions, ginger, lemon zest, and lemon juice. Serve immediately.
