  • 6 tbsp chia seeds
  • 1 cup nut milk I used @whatiffoods
  • ½ cup coconut milk
  • 6 tbsp coconut yogurt
  • 1 tbsp blue spirulina
  • 4 tbsp maple syrup
  • 2 tbsp Greek style vegan yogurt
  • ½ tsp matcha powder

Instructions

  1. Place all chia seeds, nut milk, coconut milk, coconut yogurt, blue spirulina, and maple syrup in a bowl and whisk well until everything is smooth and mixed evenly.
  2. Allow the mixture to rest for 5 minutes to thicken, then whisk again thoroughly to eliminate any lumps.
  3. Pour the prepared pudding into containers or individual servings, cover them, and refrigerate for at least 2 hours to set.
  4. When ready to serve, remove the pudding from the fridge and scoop some into a small bowl.
  5. In another bowl, combine Greek style vegan yogurt and matcha powder, then spoon small amounts on top of the pudding to create shapes resembling continents. Enjoy your earth-themed chia pudding!
