6 tbsp chia seeds
1 cup nut milk I used @whatiffoods
½ cup coconut milk
6 tbsp coconut yogurt
1 tbsp blue spirulina
4 tbsp maple syrup
2 tbsp Greek style vegan yogurt
½ tsp matcha powder
Instructions
Place all chia seeds, nut milk, coconut milk, coconut yogurt, blue spirulina, and maple syrup in a bowl and whisk well until everything is smooth and mixed evenly.
Allow the mixture to rest for 5 minutes to thicken, then whisk again thoroughly to eliminate any lumps.
Pour the prepared pudding into containers or individual servings, cover them, and refrigerate for at least 2 hours to set.
When ready to serve, remove the pudding from the fridge and scoop some into a small bowl.
In another bowl, combine Greek style vegan yogurt and matcha powder, then spoon small amounts on top of the pudding to create shapes resembling continents. Enjoy your earth-themed chia pudding!
