5 Persian cucumbers
1/2 tsp salt
1/2 tbsp sesame oil
3/4 tbsp light soy sauce
1/2–1 tbsp sugar see notes
3/4 tbsp rice vinegar
1 tbsp chili oil
1/2 tbsp sesame seeds
1/2 tbsp garlic minced optional
Instructions
Cut one end of a cucumber diagonally to create oval shaped slices; continue slicing the rest similarly according to your preferred thickness.
Place the cucumber slices in a bowl and sprinkle with half a teaspoon of salt, toss well, then refrigerate for at least 20 minutes to allow moisture to draw out.
After chilling, drain the liquid and rinse the cucumbers quickly under cold water for about 10 seconds before returning them to the bowl.
Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and optional minced garlic to the cucumbers.
Mix thoroughly until all ingredients are evenly combined and serve immediately.
Notes
Sugar: Begin with 1/2 tbsp and adjust to taste based on your chili oil and preference
Garlic: Optional but recommended according to taste
Chili oil: Adjust amount depending on desired heat level
