This easy baked spaghetti squash recipe is the best way to enjoy delicious spaghetti squash in the oven. Perfect for a healthy dinner, enjoy it as spaghetti squash with spaghetti sauce or try sauteed spaghetti squash for variety. A simple pasta squash recipe that’s quick and tasty.

Ingredients

  • 1 medium spaghetti squash (about 23 pounds)
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • 2 cloves garlic minced
  • Fresh herbs like parsley or basil finely chopped (optional)
  • Grated Parmesan cheese (optional for serving)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the inside of the squash with olive oil and season with salt and pepper.
  4. Place the squash cut side down on a baking sheet and bake for 40 minutes until tender.
  5. Remove from oven and let cool slightly then use a fork to shred the flesh into spaghetti-like strands.
  6. Saute the minced garlic in olive oil and toss with the spaghetti squash strands.
  7. Add fresh herbs and grated Parmesan if desired before serving.

Notes

  • For a richer flavor, serve with your favorite spaghetti squash with spaghetti sauce or enjoy as is for a simple side dish
