A rich and creamy Tuscan shrimp dish featuring succulent shrimp in a flavorful garlic and sun-dried tomato cream sauce, perfect for an easy and decadent dinner.

Ingredients

  • 1 pound shrimp thawed & peeled
  • 2 tablespoons butter
  • 1 teaspoon flour
  • 45 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon Italian seasoning
  • 1/4 cup sun-dried tomatoes chopped
  • 12 cups fresh baby spinach
  • handful fresh basil cut into thin strips
  • salt & pepper to taste

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add garlic and cook until fragrant.
  3. Stir in flour and cook for 1 minute.
  4. Slowly whisk in heavy cream and lemon juice.
  5. Add Italian seasoning and sun-dried tomatoes, simmer for 3-4 minutes.
  6. Add shrimp and cook until pink and cooked through.
  7. Stir in spinach and basil until wilted.
  8. Season with salt and pepper.
  9. Serve hot over pasta or rice.

Notes

  • For a spicier version, add a pinch of red pepper flakes
  • Fresh basil adds a lovely flavor, but dried basil can be substituted if needed
