1 pound shrimp thawed & peeled
2 tablespoons butter
1 teaspoon flour
4–5 cloves garlic minced
1 cup heavy cream
1/2 teaspoon lemon juice
1/4 teaspoon Italian seasoning
1/4 cup sun-dried tomatoes chopped
1–2 cups fresh baby spinach
handful fresh basil cut into thin strips
salt & pepper to taste
Instructions
Melt butter in a large skillet over medium heat.
Add garlic and cook until fragrant.
Stir in flour and cook for 1 minute.
Slowly whisk in heavy cream and lemon juice.
Add Italian seasoning and sun-dried tomatoes, simmer for 3-4 minutes.
Add shrimp and cook until pink and cooked through.
Stir in spinach and basil until wilted.
Season with salt and pepper.
Serve hot over pasta or rice.
Notes
For a spicier version, add a pinch of red pepper flakes
Fresh basil adds a lovely flavor, but dried basil can be substituted if needed
