  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/2 cup brown sugar
  • 1 tablespoon corn starch
  • 1/3 cup water
  • 2 teaspoons sesame oil
  • 1/2 tablespoon sesame seeds
  • 1/2 cup cornstarch
  • 1/2 cup flour
  • 2 egg whites
  • 1/2 cup cold seltzer water
  • 1 lb chicken thighs boneless and skinless cut into 1 inch chunks
  • vegetable oil for deep frying
  • 2 teaspoons sesame oil
  • 1/4 teaspoon crushed red pepper
  • 1 tablespoon minced garlic

Instructions

  1. Combine all the sauce ingredients thoroughly in a bowl.
  2. In another bowl, gently whisk together the batter components until mixed and coat the chicken pieces in the batter.
  3. Heat vegetable oil in a deep pan to 350 degrees and fry the battered chicken in small batches until golden and crispy.
  4. Warm sesame oil in a large skillet or wok, then sauté garlic and crushed red pepper for 30 seconds.
  5. Pour in the prepared sauce and toss the fried chicken quickly to coat, then serve immediately topped with sesame seeds.
