2 lbs boneless skinless chicken breasts or thighs cut into strips
1 large onion sliced
2 large bell peppers sliced use a mix of red green or yellow
1 packet fajita seasoning or homemade blend
1/2 cup chicken broth or water
1 tbsp olive oil
1 tbsp lime juice freshly squeezed
Instructions
Place the chicken strips at the bottom of the slow cooker.
Add the sliced onion and bell peppers over the chicken.
Sprinkle the fajita seasoning over the chicken and vegetables then drizzle the olive oil on top.
Pour the chicken broth into the slow cooker followed by lime juice.
Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
Once cooked shred the chicken with two forks and mix the ingredients together.
Serve the fajitas with tortillas rice or your favorite toppings like guacamole and sour cream.
