  • 34 boneless skinless chicken breasts
  • 3 cloves fresh garlic
  • 1-inch piece of fresh ginger
  • 1 cup coconut milk
  • 4 cups low-sodium chicken broth
  • Juice of 1 lime
  • Bell peppers and carrots (to taste)
  • Low-sodium soy sauce

Instructions

  1. Prepare the chicken breasts by cutting them into bite-sized pieces.
  2. Mince the garlic and ginger finely.
  3. In a large pot, add chicken broth and bring to a simmer.
