This Egg Roll in a Bowl is a fast and tasty weeknight meal that comes together in just 20 minutes. It’s perfect for families wanting a healthy one pan dinner full of fresh vegetables and savory flavors.

  • 1 lb lean ground beef 85/15
  • 1 Tbsp olive oil
  • ½ tsp fine sea salt or to taste
  • ¼ tsp black pepper or to taste
  • ½ medium onion finely diced
  • 1 medium carrot julienned or coarsely grated
  • 3 garlic cloves minced
  • 3 cups green cabbage thinly sliced
  • 1 tsp ground ginger
  • ¼ cup low-sodium soy sauce
  • 2 tsp sesame oil
  • ½ tsp granulated sugar
  • 1 Tbsp chopped green onion optional for garnish
  • ¼ tsp sesame seeds optional for garnish

Instructions

  1. Warm the olive oil in a large pan on medium-high heat and brown the ground beef for around 5 minutes, breaking it up as it cooks and seasoning with salt and pepper.
  2. Mix in the diced onion and carrot, cooking for 5 to 7 minutes until the onion softens, stirring every so often.
  3. Add the minced garlic and stir constantly for 30 seconds to release its aroma.
  4. Incorporate the cabbage, ground ginger, soy sauce, sesame oil, and sugar, sautéing for 5 to 7 minutes until the cabbage is tender but slightly crisp.
  5. Take the pan off the heat and sprinkle with chopped green onion and sesame seeds if desired, then serve while hot.
