1 pound chicken breasts pounded to an even thickness
1–4-1/2 teaspoon chipotle chili powder optional for more heat
1/4 teaspoon pepper
2 medium avocados ripe but firm chopped
1 cup cherry tomatoes quartered OR 2 Roma tomatoes seeded chopped
fresh corn from 1 ear sweet corn
1/3 cup finely chopped red onion
1/2 red bell pepper chopped
1 jalapeno pepper diced seeds separated
2 tablespoons finely chopped cilantro
1 garlic clove minced or ¼ tsp garlic powder
2 tablespoons lime juice
1/4 tsp EACH ground cumin salt
1/8 tsp pepper or more to taste
Instructions
Mix all the chicken rub ingredients in a small bowl and coat the chicken breasts thoroughly. If you can, let the chicken sit for 30 minutes at room temperature or chill for up to 8 hours, then warm before cooking.
While marinating, prepare the Avocado Salsa by combining all salsa ingredients except avocados in a bowl, cover and chill for 30 minutes or up to 24 hours.
For stovetop, heat a greased grill pan or skillet over medium-high heat until very hot, then cook chicken undisturbed for 3-5 minutes to brown well.
Flip chicken, cover and lower heat to medium, cooking for another 5-7 minutes until cooked through, then rest for 5 minutes before slicing.
For grilling, preheat grill to medium 375-450°F, grease grill, and cook chicken for 5-7 minutes on each side until internal temperature reaches 165°F, then rest 5 minutes before slicing.
Fold in chopped avocados to the salsa just before serving, adjusting salt, pepper, and jalapeno seeds to taste.

Serve Avocado Salsa fresh as it browns quickly, but for leftovers, cover tightly with plastic wrap to slow browning
