  • 1 cup mashed sweet potato
  • 2 1/2 cups plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large room-temperature eggs
  • 2 tablespoons brown sugar
  • 1 1/2 cups room-temperature milk
  • 2 tablespoons apple cider vinegar
  • 1/4 cup melted butter

Instructions

  1. In a large bowl, whisk together the mashed sweet potato eggs brown sugar and melted butter until smooth.
  2. In another bowl sift together the plain flour baking powder and salt.
  3. Combine the milk and apple cider vinegar and let sit for 5 minutes to curdle.
  4. Add the milk mixture to the sweet potato mixture and stir to combine.
  5. Gradually add the dry ingredients to the wet ingredients stirring until just combined.
  6. Heat a non-stick skillet over medium heat and grease lightly.
  7. Pour batter onto the skillet cook until bubbles appear on the surface then flip and cook until golden brown and cooked through.
  8. Serve warm with your favorite toppings.
