Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup plain yogurt or sour cream
  • 1 cup fresh figs chopped (about 68 medium figs)
  • Optional: ¼ cup chopped nuts (walnuts or pecans)
  • Optional: 1 teaspoon ground cinnamon
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch cake pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon if using.
  3. In a large bowl, cream the unsalted butter with granulated sugar and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Alternately add the dry ingredients and yogurt or sour cream to the creamed butter mixture, beginning and ending with the flour mixture. Stir until just combined.
  6. Fold fresh chopped figs and nuts if using into the batter carefully.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow cake to cool in the pan for 10 minutes; then turn out onto a wire rack to cool completely.
  10. Dust with powdered sugar before serving if desired.

Notes

  • Optional ground cinnamon and chopped nuts add extra flavor and texture
  • Use very ripe figs for best sweetness
  • Yogurt or sour cream keeps the cake moist
