Funeral potatoes are a creamy and cheesy potato casserole perfect for an easy dinner. This weeknight meal brings comfort food to your family dinner with simple ingredients and a crunchy topping. It is a satisfying potato casserole everyone loves.

Ingredients

  • 30 ounces frozen hash browns (thawed)
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon ground pepper (or to taste)
  • ¾ cup butter (unsalted melted (12 tablespoons))
  • 1 medium onion (chopped)
  • 10.5 ounces cream of chicken soup (1 can)
  • 2 cups sour cream
  • 2 cups cheddar cheese (shredded)
  • 2 cups corn flakes (crushed)

Instructions

  1. Set your oven to 350 degrees Fahrenheit to heat.
  2. In a large bowl, combine the thawed hash browns with half of the melted butter, salt, pepper, chopped onions, cream of chicken soup, sour cream, and shredded cheddar cheese until everything is evenly mixed.
  3. Spread this potato mixture evenly in a 9 by 13 inch baking dish.
  4. Stir together crushed corn flakes with the remaining butter in a small bowl and sprinkle this on top of the potato layer.
  5. Place the dish in the oven and bake for one hour until the casserole is bubbling and has a golden brown crust.

Notes
