Ingredients

  • 1 lb steak (sirloin or ribeye or New York strip) cut into 1 inch cubes
  • 1 medium zucchini cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley chopped for garnish

Instructions

  1. Thoroughly pat dry the steak cubes and season them with salt and black pepper.
  2. Warm the olive oil in a large pan over medium-high heat.
  3. Place the steak bites in the hot pan without crowding and sear each side for 1 to 2 minutes until browned. Remove the steak from the pan and set aside.
  4. Melt the butter in the same pan, add the minced garlic and sauté for about 30 seconds until you can smell the aroma.
  5. Toss the zucchini into the pan and cook while stirring occasionally for 3 to 5 minutes until it is tender but still crisp.
  6. Return the steak bites to the pan and mix everything so the steak is coated in the garlic butter.
  7. Let it cook together for an additional 1 to 2 minutes to heat through.
  8. Garnish with fresh parsley if you like and serve right away.
