  • 12 lasagna noodles cooked and drained
  • 2 cups cooked chicken shredded rotisserie works great!
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp unsalted butter
  • 3 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Cook the noodles in salted boiling water until they are just tender and then cool them down with cold water, laying them flat to avoid sticking.
  2. Combine shredded chicken, ricotta, mozzarella, Parmesan, garlic, Italian seasoning, salt, and black pepper well in a bowl.
  3. Melt butter over medium heat, add garlic and sauté until fragrant, then whisk in flour cooking to remove raw taste, slowly add milk and broth stirring continuously until thickened, mix in Parmesan, garlic powder, salt, and pepper, then remove from heat.
  4. Preheat oven to 375°F, grease a 9×13 inch dish lightly, spread some sauce on the bottom, spread 2 to 3 tablespoons of chicken mixture on each noodle, roll tightly and place seam side down in dish.
  5. Pour the remaining sauce over the rolls and sprinkle mozzarella and Parmesan on top, cover with foil and bake for 20 minutes, then uncover and bake 10 more minutes until cheese is golden and bubbly.
  6. Let rest a few minutes before serving and optionally garnish with parsley; serve warm with garlic bread or salad.

Notes

  • For crisp tops, broil 2–3 minutes at the end
