  • 1 lb ground chicken
  • 4 cloves fresh garlic minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs plain or Italian-seasoned
  • 2 large eggs
  • 1 medium onion diced
  • 2 tbsp soy sauce low-sodium recommended
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Set your oven to 375°F and coat a baking dish lightly with nonstick spray.
  2. Heat a skillet to medium and cook the diced onions until they soften, about 5 minutes.
  3. In a large bowl, blend the ground chicken with the cooked onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until evenly mixed.
  4. Press the mixture into a loaf shape in the prepared baking dish.
  5. Sprinkle the remaining Parmesan cheese evenly on top and add optional paprika or Italian seasoning if desired.
  6. Bake the loaf for 45 to 50 minutes or until the inside reaches 165°F.
  7. Allow the meatloaf to rest for 10 minutes before cutting into slices.

Notes

  • For crisp tops, broil 2–3 minutes at the end
