Ingredients

Scale
  • 1 ½ cups orzo pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 ½ cups Parmesan cheese freshly grated
  • 1 tablespoon unsalted butter
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped optional for garnish
  • 4 cups water or chicken broth
  • 1 teaspoon salt for the water or broth

Instructions

  1. Bring 4 cups of water or chicken broth to a boil and add 1 teaspoon of salt before adding the orzo pasta. Cook the orzo for 8-10 minutes until al dente, stirring occasionally. Drain the orzo and reserve half a cup of pasta water.
  2. Heat 2 tablespoons of olive oil in a large pan over medium heat, then add the minced garlic and cook for 1-2 minutes until aromatic but not burnt.
  3. Add 1 tablespoon of butter to the garlic oil and stir until melted and combined.
  4. Toss the drained orzo into the skillet with the garlic butter, mixing thoroughly to coat the pasta, adding reserved pasta water gradually if the mixture seems dry to reach a creamy texture.
  5. Stir in the grated Parmesan cheese until fully melted and smooth, adding more pasta water as needed for desired consistency. Season with salt and pepper.
  6. Remove from heat and sprinkle chopped parsley on top if desired. Serve immediately as a delicious side dish.
