  • 2 large sweet potatoes
  • 4 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped for garnish
  • Optional ¼ teaspoon red pepper flakes for heat

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Wash and scrub the sweet potatoes then cut into 1 inch thick wedges.
  3. In a small bowl, mix olive oil garlic smoked paprika onion powder salt black pepper and red pepper flakes if using.
  4. Toss the sweet potato wedges with the garlic oil mixture until evenly coated.
  5. Sprinkle half of the Parmesan cheese over the wedges and mix to cover evenly.
  6. Spread the wedges in a single layer on the baking sheet without overcrowding.
  7. Bake for 25 to 30 minutes turning halfway through until golden brown and crisp.
  8. Remove wedges from oven and sprinkle remaining Parmesan cheese on top while hot to melt slightly.
  9. Transfer to a platter and garnish with fresh parsley then serve immediately.

Notes

  • For crisp tops, broil 2–3 minutes at the end
