Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon dried thyme or parsley
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder optional
  • 1/4 teaspoon baking soda optional
  • 2 large eggs whisked and at room temperature
  • 13 tablespoons milk as needed
  • 4 tablespoons unsalted butter divided
  • 1 large onion roughly chopped
  • 1 medium cabbage chopped into large chunks
  • 1/4 cup vegetable or chicken stock
  • 1/2 teaspoon garlic powder
  • Kosher salt and freshly cracked black pepper to taste
  • 1 tablespoon fresh parsley roughly chopped (for garnish)

Instructions

  1. Mix the flour, dried thyme or parsley, black pepper, and salt in a bowl and add baking powder and baking soda if lighter dumplings are desired.
  2. Make a hole in the center and pour in the whipped eggs, stirring until a thick dough forms, adding milk by tablespoon to adjust consistency if needed.
  3. Boil salted water in a pot and drop spoonfuls of dough into the water, rinsing the spoon with hot water between drops to avoid sticking.
  4. Wait until the dumplings float to the top, indicating they are cooked, then remove them with a slotted spoon onto a plate.
  5. Heat 2 tablespoons of butter in a large pot over medium heat, add onion and salt, cooking until softened and light golden color, about 8 to 10 minutes.
  6. Add the remaining butter, cabbage, stock, garlic powder, salt, and pepper, stir, and simmer covered until cabbage is soft.
  7. Carefully fold the cooked dumplings into the cabbage mixture, combine well.
  8. Taste and season with extra salt and pepper if needed, then garnish with fresh parsley before serving.
