  • 16 ounces rigatoni pasta or penne
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon fresh garlic finely minced
  • 2/3 cup tomato paste
  • 1 1/3 cup heavy cream
  • 2 teaspoons red pepper flakes or to taste
  • 2 teaspoons dried basil
  • salt and pepper to taste
  • 1/2 cup freshly grated parmesan more to taste
  • 2 tablespoons unsalted butter
  • pasta water
  • optional garnishes finely chopped parsley and red pepper flakes

Instructions

  1. Heat salted water in a large pot until boiling and cook the pasta following package instructions. Reserve at least 1 cup of pasta water, then drain the pasta.
  2. Warm olive oil in a saucepan over medium heat; add garlic and tomato paste and cook for 4 to 5 minutes until the tomato paste darkens to a reddish brown, reducing its acidity.
  3. Pour in heavy cream and stir to combine, letting it simmer for 2 to 3 minutes.
  4. Stir in red pepper flakes, dried basil, salt, and pepper according to taste.
  5. Mix in grated parmesan, butter, and 1/2 cup of the reserved pasta water until the sauce is creamy and smooth; add more pasta water if needed.
  6. Toss the pasta into the sauce until evenly coated and serve, optionally topped with extra parmesan, chopped parsley, and chili flakes.
