  • ½ cup (1 stick 113 g) unsalted butter room temperature
  • ¾ cup (150 g) light brown sugar packed
  • ¾ cup (253 g) molasses
  • 2 large eggs room temperature
  • 1 cup (230 g) sour cream room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • confectioners’ sugar for dusting optional

Instructions

  1. Preheat your oven to 350 degrees and spray a 9×5-inch loaf pan with nonstick cooking spray.
  2. Cream the butter and brown sugar in a stand mixer with the paddle attachment until light and fluffy.
  3. Add molasses, eggs, sour cream, and vanilla extract beating on low until well blended.
  4. Whisk together flour, ginger, cinnamon, baking powder, and salt.
  5. Gradually add the flour mixture to the wet ingredients mixing until just combined.
  6. Pour batter into the prepared pan and bake for 60 to 75 minutes until a toothpick comes out with few crumbs.
  7. Allow to cool completely about 30 minutes.
  8. Dust with confectioners’ sugar if using. Slice and serve.

Notes

  • For crisp tops, broil 2–3 minutes at the end
