Ingredients

Scale
  • 1/2 cup warm water
  • 1/4 cup warm milk
  • 2¼ teaspoons dry active yeast
  • ⅓ cup granulated sugar + 1 tablespoon
  • 1/4 cup unsalted butter melted
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour (add more as needed)
  • ½ teaspoon salt
  • Cooking spray
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 tablespoon light corn syrup
  • 1½ teaspoons vanilla extract

Instructions

  1. Froth up the yeast by combining 1/2 cup warm water, 1/4 cup warm milk, 2 1/4 teaspoons dry active yeast, and 1 tablespoon granulated sugar and letting it rise for about 5 minutes.
  2. In a stand mixer, combine 1/3 cup granulated sugar, 1/4 cup melted unsalted butter, 1 egg, 1 egg yolk, 1 teaspoon vanilla extract, 2 1/2 cups all-purpose flour, 1/2 teaspoon salt, and the yeast mixture. Mix on low until ingredients combine, then beat on high for 5 minutes, adding flour if dough is too sticky.
  3. Let the dough rise in a greased bowl covered with a towel or plastic wrap until doubled, about 1 hour.
  4. Punch down dough and roll out to 1/2 inch thickness on a floured surface. Use donut cutters to cut out donuts and reshape scraps to cut more.
  5. Let cut donuts rise on a parchment-lined baking sheet covered lightly for 20-30 minutes.
  6. Preheat air fryer to 345°F and spray basket with cooking spray.
  7. Place donuts in basket without touching, spray lightly with cooking spray, and air fry for about 4 minutes. Repeat with remaining donuts.
  8. Combine 2 cups powdered sugar, 1/4 cup milk, 1 tablespoon light corn syrup, and 1 1/2 teaspoons vanilla extract in a bowl to make glaze.
  9. While donuts are warm, dip them in glaze and let them set on a cooling rack.
