1 tablespoon olive oil
1 pound lean ground beef
2 teaspoons chili powder
2 teaspoons cumin
½ teaspoon oregano
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons tomato paste
½ cup water
8 Corn or flour tortillas
Lettuce finely chopped
Shredded Mexican cheese blend or cheddar cheese
Tomatoes chopped
Red onions chopped
Instructions
Warm the olive oil in a skillet set to medium-high heat and brown the ground beef for about 5 to 7 minutes then drain excess fat.
Mix in chili powder, cumin, oregano, garlic powder, salt, pepper, tomato paste, and water.
Reduce heat to medium-low and simmer until the sauce thickens, about 3 to 5 minutes.
Spoon the warm meat mixture onto tortillas and top with chopped lettuce, tomatoes, cheese, and red onions or toppings of your choice.
Notes
Storage: Store any leftovers in an airtight container
