  • 1 pound lean ground chicken
  • 3 cups cooked long-grain rice preferably day-old
  • 2 tablespoons vegetable oil divided
  • 1 medium onion diced
  • 2 carrots peeled and diced
  • 1 cup frozen peas
  • 2 cloves garlic minced
  • 2 large eggs lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • ¼ teaspoon white pepper
  • 2 green onions thinly sliced for garnish

Instructions

  1. Prepare all your ingredients by chopping the vegetables and measuring the seasonings so everything is ready.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat and cook the ground chicken, breaking it apart, until no longer pink and lightly browned, about 5 to 7 minutes.
  3. Move the chicken to one side of the pan, add the remaining oil if needed, then sauté the diced onion and carrots for 2 to 3 minutes until softened.
  4. Create space in the pan and pour in the beaten eggs, stirring continuously to scramble them until fully cooked, then combine them with the chicken and vegetables.
  5. Add the cooked rice and stir-fry everything together for 3 to 4 minutes to help the rice absorb the flavors and develop some crispiness.
  6. Stir in the soy sauce, sesame oil, and frozen peas, cooking for another 2 to 3 minutes until heated through and combined well.
  7. Sprinkle white pepper over the fried rice and garnish with the sliced green onions before serving.
