  • 1 tbsp extra virgin olive oil
  • 1 lb. lean ground turkey
  • 1 small sweet onion diced
  • 2 cloves garlic minced
  • 15 oz. can diced tomatoes undrained
  • 6 oz. fresh green beans cut into 2-inch pieces (about 1½ cups)
  • 1½ cups uncooked short or long grain white rice
  • 2½ cups low sodium chicken broth
  • 1 tsp coarse salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ½ tsp dried Italian herbs
  • 1/8 tsp cracked red pepper flakes
  • 2 tsp grainy mustard
  • 2 tsp Worcestershire sauce

Instructions

  1. Warm the olive oil in a large skillet over medium-high heat. Add the ground turkey and diced onion, breaking up the turkey as it cooks until the onion softens and the meat has no pink remaining, about 3 minutes, stirring now and then.
  2. Stir in the minced garlic and cook for about 20 seconds until fragrant. Add a pinch of salt and pepper to season. Drain any excess fat, then return the skillet to heat.
  3. Pour in the diced tomatoes with their juice, green beans, rice, chicken broth, and all remaining seasonings including garlic powder, Italian herbs, cracked red pepper flakes, grainy mustard, and Worcestershire sauce. Stir well to combine.
  4. Bring the mixture to a boil, cover the skillet with a lid, then lower the heat to medium-low. Let it simmer gently for 20 to 22 minutes, or until the rice is tender and cooked through.
  5. Remove from heat, check and adjust the seasoning if needed. Serve hot and enjoy your meal immediately.
