  • lb. lean ground turkey or ground chicken
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • 1/8 teaspoon ground ginger
  • 4 green onions thinly sliced
  • 1 8 oz can sliced water chestnuts drained and coarsely chopped
  • 3 tablespoons hoisin sauce
  • 2 tablespoons lower-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons roasted red chili paste
  • Pinch of salt
  • 12 Bibb Butter lettuce leaves

Instructions

  1. Warm the olive oil in a large pan set over medium-high heat. Add the ground turkey, minced garlic, and ground ginger, cooking for about 6 minutes until the turkey is fully browned and crumbly.
  2. Transfer the cooked turkey mixture to a big bowl, then stir in the sliced green onions and chopped water chestnuts until evenly combined.
  3. In a small bowl, blend the hoisin sauce, soy sauce, rice vinegar, and roasted red chili paste, then pour this sauce over the turkey mixture and toss well to coat.
  4. Spoon roughly ¼ cup of the turkey filling into each lettuce leaf, then serve immediately and enjoy.
