A delicious and nutritious Healthy Chicken Caesar Salad perfect for a wholesome meal with crispy chicken, healthy fries, and a classic Caesar salad topped with optional hot honey for an extra kick.

Ingredients

  • 125 g chicken breast cut & pounded into a thin schnitzel
  • 1 tbsp Greek yogurt 20-25g
  • 1/2 tsp dijon mustard 2-3g
  • 1/4 tsp minced garlic or garlic powder
  • dash of paprika
  • mixed herbs
  • salt and pepper
  • 1315 g panko breadcrumbs
  • 5 g parmesan grated
  • dash of garlic powder
  • paprika

  • 225250 g white potato peeled and chopped into fries
  • 1/2 tsp olive oil 2-3g
  • Seasonings to taste e.g peri peri salt seasoning or paprika

  • 10 g light mayonnaise about 1/2 tbsp
  • 25 g greek yogurt heaped tbsp
  • 1/4 tsp minced garlic or garlic powder
  • 1/2 tsp dijon mustard
  • 1/4 tsp anchovy paste or anchovies blended to create a paste
  • 1 tbsp apple cider vinegar or red wine/white vinegar
  • 1/4 tsp Worcestershire sauce
  • 1/41/2 Lemon juiced
  • 35 g parmesan grated
  • salt & pepper to taste
  • 1/21 head cos
  • romaine or iceberg lettuce
  • 1 tsp honey 7g
  • 2 tsp hot sauce 10g
  • dash of chilli flakes

Instructions

  1. Prepare the chicken by mixing Greek yogurt, dijon mustard, garlic, paprika, mixed herbs, salt and pepper. Coat the chicken schnitzel with this mixture.
  2. Mix panko breadcrumbs, parmesan, garlic powder, paprika, salt and pepper then coat the chicken with this breadcrumb mix.
  3. Peel and chop potatoes into fries, toss with olive oil and your choice of seasonings.
  4. Bake or air fry the fries until golden and crispy.
  5. For the Caesar salad, mix light mayonnaise, greek yogurt, garlic, dijon mustard, anchovy paste, vinegar, Worcestershire sauce, lemon juice, parmesan, salt and pepper.
  6. Toss the lettuce in the Caesar dressing.
  7. Optionally, mix honey, hot sauce and chilli flakes to create hot honey drizzle.
  8. Serve crispy chicken schnitzel with healthy fries and Caesar salad topped with hot honey if desired.

Notes

  • Add the hot honey drizzle for a sweet and spicy kick
  • Use a food processor to blend anchovies for a smooth paste in the dressing
