  • 1 lb chicken breast or rotisserie chicken
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 2 cups chicken broth
  • 1 can black beans drained and rinsed
  • 1 can diced tomatoes with green chilies for added flavor
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Cilantro lime and tortilla strips for garnishing

Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Sauté onion and bell pepper until soft.
  3. Stir in garlic and cook for one minute.
  4. If using raw chicken, add and brown on all sides about five minutes; if using rotisserie chicken, shred and add later.
  5. Add chicken broth, black beans, diced tomatoes, cumin, chili powder, salt, and pepper.
  6. Let soup simmer for 20-25 minutes ensuring chicken reaches 165°F if raw.
  7. Remove chicken, shred it, return to pot, and adjust seasoning.
  8. Serve hot garnished with cilantro lime and tortilla strips.
