1 pound ground pork or turkey
1 small onion diced
3 cloves garlic minced
1 tablespoon fresh ginger grated
4 cups chicken or vegetable broth
2 cups coleslaw mix or shredded cabbage and carrots
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon rice vinegar
1⁄2 teaspoon ground black pepper
2 green onions sliced for garnish
1 cup cooked noodles like rice noodles or ramen optional for a heartier version
Instructions
Warm the vegetable oil in a large pot over medium heat.
Brown the ground pork or turkey, breaking it into pieces and cooking for about 5 to 7 minutes.
Add the diced onion, minced garlic, and grated ginger, cooking until the onion becomes clear and smells fragrant, about 2 to 3 minutes.
Pour in the broth and bring the pot to a gentle simmer.
Stir in the coleslaw mix and cook until the greens are softened, approximately 5 minutes.
Combine soy sauce, sesame oil, rice vinegar, and black pepper separately, then add the mixture to the soup and stir well.
Let the soup simmer for another 5 to 10 minutes so the flavors blend nicely.
If using, mix in the cooked noodles just before serving to heat through.
Dish out the soup hot, topped with sliced green onions.
