This high protein banana bread is a delicious and healthy protein banana loaf perfect for banana breakfast or healthy protein desserts. It combines nourishing ingredients to create a moist and satisfying protein bread that fits into healthy bread recipes and protein baking routines.

Ingredients

  • 3 medium ripe bananas mashed about 1¼ cups
  • 2 eggs
  • ½ cup plain Greek yogurt or dairy-free alternative
  • ¼ cup maple syrup or honey optional for added sweetness
  • 1 teaspoon vanilla extract
  • 1 cup oat flour or almond flour for low-carb option
  • ½ cup vanilla or unflavored protein powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • Optional add-ins ¼ cup chopped walnuts dark chocolate chips or seeds

Instructions

  1. Preheat your oven to 350°F 175°C and line a loaf pan with parchment paper or grease it well with oil or cooking spray.
  2. In a large bowl mash the ripe bananas with a fork then add the eggs Greek yogurt maple syrup if using and vanilla extract whisk until smooth and combined.
  3. In a separate bowl mix oat flour protein powder baking soda baking powder cinnamon and salt then gradually stir the dry mixture into the wet ingredients until just combined.
  4. If using gently fold in any optional add-ins like nuts chocolate chips or seeds.
  5. Pour the batter into the prepared loaf pan and smooth the top then bake for 40–50 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes then transfer to a wire rack to cool completely slice and serve.

Notes

  • Use overripe bananas – the darker the better for sweetness and moisture
  • Don’t overmix – stir just until combined to keep the texture tender
  • Choose the right protein powder – whey or plant-based both work but avoid gritty or chalky varieties
