1 lb ground turkey (lean)
4 oz cream cheese softened
5 oz fresh spinach chopped or whole
1 cup cheddar cheese freshly shredded
1 egg
½ tsp garlic powder
¼ tsp salt
Black pepper to taste
Optional ½ cup diced red bell peppers
Optional ¼ cup plain Greek yogurt
Optional mozzarella instead of cheddar
Instructions
Set your oven to 375°F and lightly grease a 9×9 inch baking dish.
In a medium skillet over medium heat, brown the ground turkey, breaking it apart as it cooks, for about 6 to 8 minutes.
Season the turkey with garlic powder, salt, and pepper, then add the spinach and cook until it softens, around 2 to 3 minutes.
Turn the heat down to low and mix in the cream cheese until it melts completely and blends with the turkey mixture.
Remove the skillet from the heat and let the mixture cool for 5 minutes before stirring in the beaten egg and half of the shredded cheddar cheese.
Transfer everything into your baking dish and sprinkle the remaining cheddar cheese on top.
Bake it uncovered for 20 to 25 minutes until the casserole is bubbly and golden brown.
Allow it to rest for 10 minutes before cutting and serving.
