These high-protein pancake sausage mini muffins are a cozy, savory bite perfect for busy mornings. Made with Kodiak pancake muffins, they are ideal meal prep breakfast for kids and adults alike. Using pancake bites muffin tins, these high protein pancake muffins deliver a delicious twist to your usual breakfast routine.

Ingredients

  • 2 cups Kodiak pancake mix (or other protein pancake mix)
  • 1 lb ground sausage browned and crumbled
  • 2 cups milk (try Fairlife for extra protein)
  • 2 eggs
  • ¼ cup maple syrup
  • 1 cup shredded cheese (cheddar or Colby jack)

Instructions

  1. Preheat oven to 350°F (175°C) and grease mini muffin tins.
  2. In a large bowl, mix Kodiak pancake mix, browned sausage, milk, eggs, maple syrup, and shredded cheese until well combined.
  3. Spoon the batter evenly into the mini muffin tins, filling each about 3/4 full.
  4. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  5. Let cool slightly before removing from tins and serving warm.
