Ingredients

  • 1 lb large shrimp peeled and deveined
  • ¼ cup honey
  • ¼ cup soy sauce or tamari for gluten-free
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tbsp olive oil
  • 2 cups cooked white rice or brown rice or quinoa
  • 1 cup broccoli florets steamed or sautéed
  • ¼ cup green onions finely sliced
  • Optional sesame seeds or crushed red pepper flakes for garnish

Instructions

  1. Combine honey soy sauce garlic and grated ginger in a small bowl until well mixed.
  2. Warm olive oil in a skillet over medium heat then add shrimp spreading them out evenly. Let cook for 2 to 3 minutes per side until shrimp are pink and curled up.
  3. Stir in the honey garlic sauce and cook for 2 minutes allowing it to thicken and coat the shrimp completely.
  4. While shrimp are cooking steam the broccoli until tender or sauté lightly for extra flavor.
  5. Serve rice or quinoa in bowls topped with the glazed shrimp and steamed broccoli then sprinkle with green onions and your choice of sesame seeds or red pepper flakes.

Notes

  • This recipe is dairy-free and can be made gluten-free by using tamari
  • You can use pre-cooked shrimp but reduce the cooking time to just heat through in the sauce
