  • 2 pounds chicken thighs boneless skinless
  • For serving chopped scallions sesame seeds rice optional to taste
  • 1/3 cup low-sodium soy sauce
  • 1/3 cup honey
  • 1/3 cup ketchup
  • 6 cloves garlic minced
  • 1/2 teaspoon apple cider vinegar
  • 1 teaspoon grated fresh ginger
  • 1 pinch crushed red pepper flakes optional
  • 2 tablespoons cornstarch

Instructions

  1. Place the chicken thighs evenly in the slow cooker.
  2. Combine all sauce ingredients except cornstarch in a bowl and whisk until smooth.
  3. Pour the sauce over the chicken and cook on high for 3.5 hours or low for 6 to 8 hours.
  4. Stir together cornstarch and cold water, then add to the slow cooker and mix well.
  5. Continue cooking on high for 15 minutes to thicken the sauce.
  6. Serve the chicken whole or shredded with rice and garnish with scallions and sesame seeds if you like.
