  • 8 chicken thighs
  • zest of 2 lemons
  • 2 lemons juice of 1 lemon cut the other lemon into slices
  • 3 tablespoon honey
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon red chili flakes
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon mustard powder

Instructions

  1. Combine lemon zest lemon juice honey olive oil black pepper red chili flakes paprika garlic powder mustard powder and salt in a bowl and coat the chicken thighs thoroughly with this mixture
  2. For oven baking preheat oven to 400°F 200°C and lay the chicken thighs on a lined baking sheet then arrange lemon slices on and around the chicken
  3. Bake for 35 to 40 minutes until the internal temperature hits 165°F 75°C and the skin looks golden and crispy
  4. Broil on high for the last 2 minutes to create a crispy skin and some char
  5. Let the chicken rest before serving
  6. For air fryer preheat to 375°F 190°C then place coated thighs in basket in a single layer with lemon slices surrounding them
  7. Cook for 18 to 22 minutes flipping halfway and ensure the internal temperature reaches 165°F 75°C
  8. Broil at high for 2 minutes at the end to crisp the skin
  9. Rest the chicken before serving

Notes

  • Don’t have an air fryer? Bake in the oven for 50 minutes and flip halfway
  • Broil for 3 minutes to get a nice crust
