4 chicken thighs bone-in and skin-on
Salt and freshly ground black pepper to taste
2 tablespoons olive oil
3 tablespoons honey
2 cloves garlic minced
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
1/2 teaspoon ground cinnamon
1/4 teaspoon ground black pepper
1 cup fresh or dried figs halved or quartered
1/4 cup white wine or chicken broth optional for roasting pan
Fresh thyme sprigs for garnish optional
Instructions
Preheat your oven to 400°F (200°C).
Season the chicken thighs with salt and freshly ground black pepper.
In a large ovenproof skillet, heat olive oil over medium-high heat. Add chicken thighs skin-side down and cook until golden brown, about 5-7 minutes.
Flip the chicken and add garlic, thyme leaves, ground cinnamon, ground black pepper, honey, and figs around the chicken.
Pour white wine or chicken broth into the pan if using.
Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the chicken is cooked through and the figs are soft.
Garnish with fresh thyme sprigs if desired and serve warm.
Notes
Use bone-in skin-on chicken thighs for the best flavor and texture
Fresh figs can be substituted with dried if fresh are unavailable
The white wine or chicken broth is optional but adds moisture and flavor to the roasting pan
