  • 1/2 lb bacon cut into quarter pieces
  • 1 onion finely chopped
  • 1/2 cabbage roughly chopped
  • 1/2 lb potatoes washed and diced
  • 1 carrot peeled and finely sliced
  • 4 to 5 cups chicken stock
  • 1 bay leaf
  • Kosher salt and black pepper to taste
  • Parsley chopped for garnish

Instructions

  1. Cook the bacon in a large pot over medium heat until it becomes crispy, about 5 to 7 minutes, then remove it with a slotted spoon and keep the bacon fat in the pot.
  2. Add the chopped onion to the pot and sauté for 3 to 4 minutes until soft, then include the sliced carrot and cook for an additional 2 minutes.
  3. Mix in the diced potatoes and chopped cabbage, season with salt and pepper, and cook for another 3 to 4 minutes to slightly soften the vegetables.
  4. Pour the chicken stock into the pot, add the bay leaf, bring to a boil, then lower the heat and let it simmer for 15 to 20 minutes until potatoes and cabbage are tender.
  5. Return the cooked bacon to the soup, stir well, adjust seasoning as needed, ladle into bowls, garnish with chopped parsley, and serve warm.

Notes

  • For added richness, you can substitute half of the chicken stock with beef broth
