Korean Cucumber Salad is a fresh and simple side dish perfect for easy dinner and weeknight meals. This crunchy salad combines crisp cucumbers with a tangy dressing, making it ideal for family dinners and fresh side dishes.

  • 2 large cucumbers Korean or Persian
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon chili flakes or gochugaru for authentic flavor
  • 1 teaspoon sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 2 green onions finely chopped
  • 1 garlic clove minced optional

Instructions

  1. Rinse the cucumbers well and slice them thinly into rounds or half-moons as you prefer.
  2. Sprinkle salt over the sliced cucumbers in a large bowl and mix them, then let them rest for 10 minutes to remove excess water.
  3. Whisk together rice vinegar, soy sauce, chili flakes, sugar, sesame oil, and minced garlic in a different bowl until sugar dissolves.
  4. Drain the cucumbers and rinse under cold water to lessen the salt, then pat dry with a towel.
  5. Toss the cucumbers with the prepared dressing until evenly coated.
  6. Scatter chopped green onions and sesame seeds on top and gently mix one final time.
  7. Refrigerate the salad for about 20 minutes so the flavors can blend well before serving.
