  • 1 tbsp Olive oil
  • 1 lb Cauliflower (frozen or fresh riced in a food processor)
  • 1/2 tsp Sea salt
  • 1/8 tsp Black pepper
  • 1 tbsp Olive oil
  • 1 lb Ground beef
  • 1/2 tsp Sea salt
  • 4 cloves Garlic (minced)
  • 1/4 cup Coconut aminos
  • 1/4 cup Beef broth
  • 2 tsp Sesame oil
  • 1/4 tsp Ground ginger
  • 1/4 tsp Crushed red pepper flakes (or just more black pepper)
  • 1/4 cup Green onions (sliced)
  • 1 tsp Sesame seeds
  • 1 small Cucumber (~8 ounces sliced)

Instructions

  1. Warm one tablespoon of olive oil in a skillet over medium-high heat and add the cauliflower rice seasoned with salt and pepper; cook it for 3 to 5 minutes until it softens, then set it aside while keeping warm.
  2. In a separate bowl, mix together the coconut aminos, beef broth, sesame oil, ground ginger, and crushed red pepper flakes and keep this sauce ready.
  3. Heat another tablespoon of olive oil in the same skillet on medium-high, add the ground beef, and sprinkle with sea salt; cook for 8 to 10 minutes, breaking it apart regularly, until fully browned.
  4. Push the beef to the sides of the pan, add minced garlic to the center, and sauté for about a minute until fragrant, then stir it all together.
  5. Pour the prepared sauce over the beef, bring it to a boil, and lower the heat to simmer for 3 to 4 minutes until the sauce thickens and absorbs into the meat.
  6. Assemble the bowls by placing the cauliflower rice as the base, topping it with the sauced ground beef, then arranging cucumber slices on the side and sprinkling green onions and sesame seeds on top.
