  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 whole lemon sliced
  • salt and pepper to taste
  • fresh thyme

Instructions

  1. Dry the chicken thighs thoroughly and season them well with salt and pepper.
  2. Heat butter and olive oil in a cast iron skillet over medium-high heat.
  3. Place chicken in the skillet skin side down and brown each side for 4-5 minutes until the skin turns golden.
  4. Flip the chicken so the skin faces up, then arrange lemon slices and thyme around it.
  5. Move the skillet to a preheated oven at 425F and bake for 25 minutes until the chicken reaches 165F internally.
  6. For extra crispness, broil the chicken skin side up for 2 minutes after baking.
