  • 1 pound large shrimp peeled and deveined
  • 1 bunch asparagus trimmed and cut into bite-sized pieces
  • 4 cloves garlic minced
  • 1 lemon juice and zest
  • 2 tablespoons olive oil
  • 1 tablespoon butter optional
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional
  • 2 tablespoons freshly chopped parsley for garnish

Instructions

  1. Rinse the shrimp under cold water and dry with paper towels then season with salt and black pepper.
  2. Remove the tough ends from the asparagus and slice into 2 inch pieces.
  3. Warm 1 tablespoon of olive oil in a large skillet over medium heat, then add the garlic and cook for about 1 to 2 minutes until aromatic.
  4. Turn the heat to medium-high, place the shrimp in the skillet and cook 2 to 3 minutes on each side until they turn pink and opaque, then remove them and set aside.
  5. Add the remaining tablespoon of olive oil to the same skillet and cook the asparagus for 3 to 4 minutes until tender but still crisp.
  6. Return the shrimp to the skillet, pour in the lemon juice and zest, add the butter if using, and stir everything together, cooking for another 1 to 2 minutes to blend the flavors.
  7. Finish by sprinkling freshly chopped parsley and red pepper flakes if desired before serving immediately.
