This Low-Carb Egglife Lasagna offers a simple recipe perfect for an easy dinner or weeknight meal. Enjoy a family dinner full of comforting flavors with this high-protein, cheesy dish. A delicious take on classic comfort food.

  • 1 package Egglife wraps approx 6 wraps
  • 1 lb ground hamburger 85/15 lean or fat recommended
  • 1 jar Rao’s marinara sauce or any low-carb sauce approx 24 oz
  • 16 oz cottage cheese small curd 4% milkfat recommended
  • 2 bags shredded mozzarella cheese about 4 cups total
  • 1 large egg
  • 1 tsp Italian seasoning
  • 1 tsp steak seasoning or to taste

Instructions

  1. Heat the oven to 350 degrees Fahrenheit 175 degrees Celsius and grease an 8×8 baking dish lightly with cooking spray.
  2. Cook the ground hamburger in a large skillet over medium-high heat until brown and fully cooked about 8 to 10 minutes, stirring to break it up, then drain off extra grease.
  3. Mix the marinara sauce into the meat and let it simmer for 2 to 3 minutes before taking it off the heat.
  4. In a medium bowl, blend together the cottage cheese, 1 bag of mozzarella cheese 2 cups, the egg, Italian seasoning, and steak seasoning until combined.
  5. Build the lasagna by spreading a thin layer of the meat sauce on the bottom of the baking dish, then layering 2 Egglife wraps, followed by half of the cheese mixture.
  6. Repeat with another layer of meat sauce, 2 more Egglife wraps, and the rest of the cheese mixture.
  7. Finish by placing the last 2 Egglife wraps on top, covering with the remaining meat sauce, and sprinkling the second bag of mozzarella cheese over everything.
  8. Bake uncovered for 30 to 45 minutes until the lasagna is hot, bubbly, and golden on top.
  9. Allow the lasagna to rest for 10 to 15 minutes before cutting and serving.

Notes

  • Do not pre-cook the Egglife wraps as they will soften while baking
  • You can substitute ground turkey or Italian sausage for the hamburger
  • For crisp tops, broil 2–3 minutes at the end
