1 teaspoon olive oil
1– 1 ½ pounds boneless skinless chicken breasts or thighs diced into 1 inch pieces
2 teaspoons Italian Seasoning divided
salt and pepper to taste
½ cup diced carrots
½ cup diced celery
½ cup diced onions
¼ cup diced sundried tomatoes
3 garlic cloves minced
¼ cup flour
2 tablespoons tomato paste optional
6–8 cups chicken broth
6 oz pasta
1 cup heavy whipping cream
½–1 cup grated parmesan reggiano cheese
2 ½–3 cups fresh spinach
Instructions
Heat olive oil in a large pot over medium heat.
Add chicken pieces seasoned with half the Italian seasoning salt and pepper. Cook until browned and nearly cooked through.
Remove chicken and set aside.
In the same pot add diced carrots celery onions and sundried tomatoes. Cook until vegetables soften.
Add minced garlic and cook for another minute.
Stir in flour and cook for 1-2 minutes.
Add tomato paste chicken broth remaining Italian seasoning and bring to a boil.
Return chicken to the pot reduce heat and simmer for 15 minutes.
Add pasta and cook until tender.
Stir in heavy cream parmesan cheese and fresh spinach cook until spinach wilts.
Adjust seasoning with salt and pepper if needed. Serve hot.
Notes
For a thicker soup use less broth or add more flour
Substitute small shells with any pasta you prefer
Tomato paste is optional but adds depth to the flavor
