This Mediterranean Chicken Zucchini Bake is a flavorful, healthy dish combining tender chicken, fresh vegetables, and aromatic spices, topped with melted cheese and fresh parsley. Perfect for a quick, satisfying dinner.

  • 2 boneless skinless chicken breasts cut into bite-sized pieces
  • 2 medium zucchinis sliced into half-moons
  • 1 cup cherry tomatoes halved
  • ½ red onion thinly sliced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional for heat
  • ½ cup shredded mozzarella cheese or feta for a Mediterranean touch
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine chicken pieces, zucchinis, cherry tomatoes, red onion, garlic, olive oil, oregano, basil, smoked paprika, salt, black pepper, and red pepper flakes. Toss everything until well coated.
  3. Transfer the mixture to a baking dish and spread evenly.
  4. Bake uncovered for 20 minutes or until the chicken is cooked through and vegetables are tender.
  5. Remove from oven, sprinkle mozzarella and Parmesan cheeses evenly on top.
  6. Return to oven and bake for an additional 5 minutes or until cheese is melted and golden.
  7. Garnish with fresh parsley before serving.

Notes

  • For added heat, increase red pepper flakes to your taste
  • Substitute mozzarella with feta for a more distinct Mediterranean flavor
