  • 4 flour tortillas
  • 1 cup fresh spinach chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato diced
  • 1/4 cup red onion thinly sliced
  • 1 tablespoon olive oil
  • Black pepper to taste

Instructions

  1. Combine mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper in a bowl and stir until evenly mixed.
  2. Spread one-fourth of the mixture on half of a tortilla then fold it over to cover the filling.
  3. Warm a non-stick pan on medium heat and add olive oil.
  4. Place the folded tortilla in the pan and cook for around 3 to 4 minutes until the bottom turns golden.
  5. Flip the quesadilla and cook for another 3 to 4 minutes until the other side is also crispy.
  6. Take off the heat, cut into wedges, and serve while hot.
