Mediterranean Sheet Pan Chicken is a flavorful and easy dinner perfect for weeknight family meals. This sheet pan dinner features juicy chicken thighs with roasted vegetables and bold Mediterranean herbs. A quick, comforting dish ready in 35 minutes.

Ingredients

  • 1 to 1 1/2 pounds chicken thighs bone-in skin-on
  • 1/2 of a large red onion sliced into wedges
  • 1 red bell pepper seeds removed cut into 1 inch pieces
  • 1 small zucchini cut into rounds
  • 1/2 cup crumbled feta cheese
  • 1/2 cup kalamata olives pitted
  • 1 pint cherry tomatoes
  • Fresh parsley chopped for garnish
  • Fresh dill for garnish
  • Lemon wedges for garnish
  • 1/4 cup extra virgin olive oil
  • 1 lemon juiced
  • 4 garlic cloves minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon thyme
  • 1 teaspoon dried dill
  • 1 teaspoon dried basil
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon black pepper

Instructions

  1. Combine olive oil lemon juice garlic oregano rosemary thyme dill basil salt and pepper in a small bowl and whisk well.
  2. Place chicken thighs in a large bowl then pour 3/4 of the marinade over them and toss to coat. Cover and chill for 15 minutes but no longer than 2 hours.
  3. Heat the oven to 425 degrees Fahrenheit.
  4. Put onion bell pepper and zucchini in a medium bowl add the remaining marinade and toss until all vegetables are evenly coated. Arrange the vegetables on a baking sheet.
  5. Position the chicken pieces among the vegetables on the pan. Bake for 20 minutes then remove the pan to add olives tomatoes and feta cheese.
  6. Return the pan to the oven and bake for another 10 minutes or until chicken reaches 165 degrees Fahrenheit internally.
  7. Remove from oven scatter parsley and dill over the dish and serve with lemon wedges and your choice of sides.

Notes

  • Leftovers keep fresh in an airtight container in the fridge for up to three days and can be warmed in a hot oven before serving
