  • 1 ½ cups confectioners’ sugar
  • 1 (20 ounce) can crushed pineapple with juice
  • 2 (8 ounce) cans mandarin oranges drained
  • 1 (3.5 ounce) package instant vanilla pudding mix
  • 1 (8 ounce) container frozen whipped topping thawed

Instructions

  1. Prepare the cake mix according to package directions and bake two 8 inch round cake layers. Allow the cakes to cool fully, then cut each layer horizontally to create four cake layers total.
  2. Beat the cream cheese in a large bowl until smooth and soft. Gradually add the confectioners’ sugar and continue beating.
  3. Stir in the crushed pineapple with its juice and the drained mandarin oranges, holding back a few slices for garnish. Mix in the dry pudding mix, then fold in the thawed whipped topping carefully until combined.
  4. Place one cake layer on a serving plate with the cut side facing up and spread a layer of the frosting on top. Add a second layer with the cut side facing down and spread more frosting. Repeat this process with the remaining layers, covering the top and sides with frosting.
